Craving Thai…

Here are some recipes that I need to adapt and try… they sound like some of my favorite foods (Siam Beef Salad from Bangkok Bay in Solana Beach and Crazy Duck from Thai House on Convoy).

INGREDIENTS
  • ¼ teaspoon [1 mL] salt
  • 2 tablespoons [30 mL] Thai fish sauce (nam pla)
  • 2 tablespoons [30 mL] sugar
  • ¼ cup [60 mL] lime juice
  • 4 garlic cloves, minced
  • 4 Thai chiles or 6 serrano chiles, minced
  • 1 pound [450 g] roasted duck meat, minced (see Chef Notes)
  • 1 tablespoon [15 mL] galangal, minced
  • Juice of 2 limes
  • 1½ tablespoons [25 mL] roasted rice powder
  • 1 to 2 tablespoons [15 to 30 mL] ground bird pepper, to taste
  • 3 shallots, minced
  • 2 scallions, sliced
  • ½ cup [120 mL] watercress leaves, chiffonade
  • ¼ cup [60 mL] cilantro leaves, minced
  • ¼ cup [60 mL] mint leaves, roughly torn
  • 2 large makroot leaves, central rib removed, finely shredded
  • 8 leaves Napa cabbage, chiffonade
  • 16 cherry tomatoes, halved
  • 8 long beans, cut into 2-inch [5-cm] lengths, or 40 thin green beans, trimmed and lightly blanched
  • Cilantro and mint leaves
INSTRUCTIONS
  1. Combine all the dressing ingredients in a nonreactive bowl and stir well to dissolve the sugar. Reserve. (The dressing can be made 1 day in advance.)
  2. Combine the duck with the galangal and half of the lime juice in a large bowl and toss gently.
  3. Pour the dressing over the duck and taste for tartness (it should be quite tart). Allow this mixture to stand 10 minutes before assembling the salad.
  4. Immediately before service, add the roasted rice powder and the ground bird pepper and toss gently to incorporate.
  5. Add the shallots, scallions, watercress, cilantro, mint, and the shredded makroot leaves. Toss well. Taste the salad for a balance of spice, sour, and salt and adjust if necessary (it should be very spicy).
  6. Place 2 ounces [55 g] of the duck mixture on a bed of shredded cabbage. Arrange the cherry tomatoes and beans on the side and garnish with cilantro and mint leaves.

INGREDIENTS
  • 1 pound beef sirloin, tenderloin, or flank steak (Approximately 1 inch thick)
  • 1 teaspoon salt
  • 1 teaspoon pepper

Marinade

  • 2 tablespoons soy sauce
  • 2 teaspoons white pepper
  • 2 tablespoons Thai fish sauce
  • 4 tablespoons fresh lime juice
  • 2 tablespoons palm sugar
  • 8 cloves fresh garlic

Dressing

  • 1/2 cup fresh lime juice
  • 1 to 4 tablespoons Thai fish sauce (add to taste)
  • 1 to 3 teaspoon fine ground red chili pepper
  • 1 teaspoon sugar
  • 3 cloves fresh garlic
  • 1 tablespoon fresh ginger(about 1 1/4 inch section)

Salad

  • 1 head red or green loose leaf lettuce
  • 1/2 red onion
  • 1 bunch fresh cilantro (Asian coriander)[Substitute–fresh parsley]
  • 1 bunch mint leaves (wild sesame/Korean mint/Korean sesame)
  • 1 small cucumber
  • 1 tomato
  • 4 shallots

Garnish

  • 2 tablespoon uncooked long grain rice
  • 4 green or spring onion
INSTRUCTIONS
  1. Prepare Marinade Ingredients; Crush, press, or blend 8 cloves garlic.
    Add all marinade ingredients to a small mixing bowl and mix well.
    Let stand at room temperature for twenty minutes.
  2. Prepare Steak: Slice the steak into strips about 1/4 inch thick and 2 inches in length (partially freezing the steak will make it easier to slice). Lightly salt and pepper the meat and let stand ten minutes.
    Place meat into a mixing bowl, cover with marinade and mix well.
    Let stand in refrigerator two to twenty four hours.
  3. Prepare Dressing Ingredients: Finely chop 3 cloves of garlic.
    Peel and finely grate ginger.
  4. Prepare Salad Ingredients: Separate lettuce leaves and wash in cold water. Drain and pat dry with paper towel.
    Thin slice onion from top to bottom.
    Coarse chop (large pieces) the cilantro and mint.
    Wash tomato in cold water and thin slice.
    Peel cucumber, cut in half lengthwise, and thin slice.
    Peel and thin slice the shallots lengthwise.
  5. Prepare Garnish Ingredients: Dry toast the uncooked rice in a small skillet over high heat until browned. Remove from heat and let cool. Rough grind with mortar and pestle, coffee grinder, or blender.
    Trim top and bottom from green onion, wash in cold water, and finely chop.
  6. Hand tear lettuce leaves and place in a large salad or mixing bowl.
  7. Lightly oil a skillet and heat over high heat. Add steak pieces and sear.
    Add 1/2 cup water to skillet, bring to a boil, and cook for one minute.
    Remove steak pieces from skillet and place in a medium mixing bowl.
  8. Place all dressing ingredients (except ginger) into the skillet and just bring to a boil. Reduce heat and simmer for ten minutes.
    Remove from heat, add shredded ginger, and pour the mixture over the beef.
    Mix well.
  9. Remove meat from the mixture and place on top of the lettuce. Add all other salad ingredients and toss.
  10. Drizzle 1/4 of the dressing over the salad, serving the remaining dressing on the side.
  11. Sprinkle salad with green onion and toasted ground rice.
  12. Serve warm with steamed rice.

Yes, I know we’ve been absent for awhile…

… but we have a big announcement!  We’re expecting a little one on March 28th!!

 We’ve known for a while but the Mrs. decided that it was easier to maintain radio silence in blog land for awhile rather than to try to keep such a big secret.   We are overjoyed and can’t wait to welcome our baby into the world!

We’re four months along and are just LOVING the experience so far.  Granted, there are some downsides.  Mrs. experienced a lot of the common first trimester ailments, but no matter what life throws at us, it is sooooo worth becoming PARENTS!  Thanks so much for your love and support to our family and friends. :)   We appreciate you more than you can possibly know!  14 weeks tomorrow and counting…

Poppy’s Room

So we’ve continued work on the nursery and have finished the background:

He’s not quite finished and his friends (a lion, monkey, and parrot) haven’t been started yet, but I’m super excited about the masterpiece!

I’m also sewing my own apron.  It’s hard.  Being a homemaker doesn’t come naturally to me, but I’m trying!

Mural Day 3

Today was a busy day – this morning I headded down to meet with Kim.  After having some cocoa, we headed over to the mall to exchange an eyeliner (I bought one at MAC yesterday and when I got home, the box was empty) and then ran a couple of quick errands before meeting the boys for lunch.  Everyone was generous and good sports and we had dim sum (I won’t force them to again).  Afterwards, Kim and I went grocery shopping, got shoes for ballet tomorrow, and painted another layer:

Then we made dinner (taco salad), watched David ref some basketball games, and watched Push until people started falling asleep.

Hurray!

Absolutely beautiful wedding today – and such amazing people!  The bride and the groom are actually moving to Scotland in just a couple of months so that the bride can finish her doctorate in physical forensic anthropology at the University of Edinburgh.  Tell me that’s not cool!!!!

I was working haaaaard all day but I did manage to catch a couple of photos on my iPhone of the beautiful traditional Jewish ceremony and of the bride and groom heading back to their hotel at the end of the daytime reception.

Then I met my sweet hubby and Merv for some yummy sushi (spicy tuna handroll, cucumber roll, a piece of salmon skin roll, and mochi!) before coming home to bask in the air conditioning.

Have I mentioned that I love my life?

Special shout out to my MOTHER without whom today could not have been possible. :)

Mrs. really enjoyed her first ballet class, even though it would have been a lot more fun if Kim had been there with her.  She was about 15 minutes late after trying unsuccessfully to find the building at the street address 224 East Valley Pkwy (it was 2245, about 2 1/2 miles down) and felt immediately awkward walking into a room with about 25 dancers doing warmups at the barre.   Now the Mrs. actually did ballet and tap when she was a teensy kiddo, but nowadays she’s not quite as limber.  Nevertheless, she stuffed her behind into a pair of spandex pants, borrowed some cutoff tights and practiced flexibility exercises.

It’s going to be a fun class once she gets more used to it all. :)

Friday was a busy day culminating in a wedding rehearsal at Tom Ham’s for Sunday’s wedding and a night of bingo with Scott, Sarah and Sarah’s mom out at Sycuan.  It was a lot of fun although it got a bit crazy when Sarah and Cathy left and we took over their bingo cards as well (I will never know how the old ladies do it!) but we didn’t win anything.

Today was a day of laziness… highlights were driving to Costco and then enjoying grilled cheese sandwiches and chili con carne with the hubby for dinner.  Is it sad when the highlight of your day is the company and the food?  It was just so hot that it was a little bit hard to get comfortable.  Ahhh well… we will have a lot more of this to come living here in Escondido.

While I’m posting, does anyone know how to get rid of wasps nests on our walls?  We have about 5-6 of them on our front porch walls and ceiling right now; there is one made of paper and 5 or so made of mud.   I admit that I’m a bit nervous about handling them…

1500 miles later

Wow – long weekend!  I don’t really have the energy to go into great detail, so here’s some quick facts/pictures.

Thursday was spent painting and packing.  Layer 2 (palm trees on the horizon) is finished!

After making a fancy schmancy spaghetti sauce (NOT! I just added sauteed onions, garlic, rosemary, and parsley to the canned sweet pepper sauce we bought) to go with the pasta and meatballs, we hit the road.  I was a road warrior and drove all the way to Sacramento (6:30pm until 2:30am) with only 2 short gas stops.  I know, I’m amazing.  We stayed at a hotel right by Sac. State and survived.  I got really freaked out by a 3:30 am phone call from a breathy voice saying that he had seen me in the parking lot and thought we should get to know each other better.  I didn’t sleep well after that, but we were up early (8ish, I believe) to start the drive to Tahoe.

We spend Friday morning through Sunday morning at the KOA Kampground in South Lake Tahoe.  It was gorgeous and good times were had at the Beacon:

Chrissy and I also had a great time on the Nevada side exploring the different shops and watching the gondolas.  Then we headed down Stateline to the beach-side park to stake out good seats for some fireworks action:

We threw the softball a bit, bumped the volleyball a bit, played Apples to Apples, and settled back to watch the fireworks.  Kim and Larry were along with us for this year’s trip (last year it was our other good friends, Scott and Sarah):

After a 2-hour drive back to the campsite (bumper-to-bumper!!!), we caught a few z’s for the drive back down the mountain.

Sunday was spent at Dave’s pool in Sacramento and taking old time style photos in Old Sac (perhaps they will be scanned in for future viewage lol).  Monday was another driving day and then softball at night (we lost for the first time this season, by 1 run).  Tuesday was spent having lunch with the men (Lil Pepper!), checking out the Reuben H. Fleet Science Center, and enjoying snow cones. 

Today I got up super early to drive Kim to the airport (I left at 4am) at which time I realized that I had driven 1500 miles since Thursday.  After returning home, I spent the day prepping for this weekend’s wedding and playing silly computer games. :)

I’m excited for the first day of my ballet class tomorrow!

Painting: Day 1!

Busy day today, less because it was busy and more because things went wrong. :)

Early morning wake-up call for Mrs. and Kim to drive Mr. to work.  Then we drove down to Balboa Park to play – we took some pictures and went to the Timken Art Museum (the Rembrandt was creepy and the Volterra made the Mrs. smile).  We actually randomly ran into my aunt and cousin there  (this was especially weird since I saw them yesterday) and spent a little time talking to them and watching them photobooth.

Then we headed up to Starbucks to snap out of our haze and sunbathe… we sat and chatted for like an hour and a half and got slightly pinkened (fried).  Theeeeen we picked up the menfolk for lunchy munchy and went to Shogun to eat fancy food.  Yum.  My favorite part was the part when the guy tried to squirt fake soy sauce on Kim.  I think everyone else caught on really quickly but I totally thought it was real for like 5 minutes and kept laughing.  Then I figured it out.  Dur.  Lunch was too much food, so we packed it up to go and then managed to forget it on the table.  I sent Kim back for it.  She had to walk 5 miles both ways uphill in the snow in San Diego.  Yeah, you know that’s true.

THEEEEEENNNNN we headed to Target and bought an iron and other fun goodies but passed by the brown dress (*tear*) and successfully escaped to the bank/car.  Upon arriving home, we decided it was a good time to shake the paint up and start the mural.  And it was a good time.  And a good idea.  Until the paint can was upside down on the floor with the lid off and half the contents on the carpet.  Then suddenly it wasn’t such a good idea anymore.

Tips for future painters:

1. Do not try to shake a gallon of paint while carrying a barstool in the other hand.
2. If you do try to shake a gallon of paint, try to do so with the lid facing upwards.
3. Don’t drop the paint.  Note:  THIS IS THE MOST IMPORTANT STEP.
4. If you drop the paint, don’t drop it on the carpet.  Note:  THIS IS ALSO IMPORTANT.
5.  If you drop the paint on the carpet, it is usually a good idea to have handy cleaning items: bucket, water, soap, rags, etc.
6.  You need a steam cleaner.  Really.  They rent them at Vons.

Yes, it was a fun afternoon.

The awesome part is, not only did most of the paint come out, but my husband somehow didn’t even notice (!!!!)  when he got home.   And then wasn’t even upset when it was pointed out.  Crisis averted.
